What To Eat?

The most popular session of the time.

Years of expertise have been condensed into an easy session.

Eat no animals that fly, swim, crawl,  and run.

Brave documentaries have revealed what is being done to our food and water supply. Sadly, evidence-based studies have shown the association of cancers, heart disease, Type 2 diabetes and even mental conditions like depression or Alzheimer’s Disease are linked to our processed food. Our gut microbiome, along with overuse of antibiotics, has led to an increasing amount of autoimmune and inflammatory conditions that are the root cause of chronic illnesses today, including chronic kidney disease.

Welcome to our “What to Eat” Sessions!!
The overuse of  supplements or adding more medications to your daily regimen is only half the battle. Once you realize you don’t need a shelf full of plastic bottles, the big question is: How do you actually  fuel your body?

That is where my “What to Eat” sessions come in.
I don’t do boring, generic, restrictive diet plans that force you to eat plain chicken
and broccoli until you quit. Nor eat everything raw.  I don’t care what culture you come from or what foods. you love—whether it’s soul food, Latino dishes, Caribbean spice, Asian cuisine, or classic comfort food.

Your culture’s food is not the enemy.

In these sessions, I teach you how to look at the meals you already love through a
lens of pure biochemistry and anatomy. We take your favorite dishes and
masterfully tweak the preparation, the sourcing, and the ingredient balance so
they deliver the exact raw materials your body needs. And taste delicious!

Here’s how to upgrade a classic cultural dish:

(1) Example client who passed kidney stones.  I check her 24 hour urine collection results plus took a dietary history.  She made calcium oxalate stones, her urine volume was low and her dietary fruit intake was nil.  We discuss lowering the salt in her diet–using spices/herbs instead that aligned with her favorite restaurant food. We create a fruit bowl 1-3 different types of fruit- IN SEASON- along with cucumbers. These ‘bowls” can be desserts for lunch/dinner. I broke down the principles as to how these lifestyle changes have lowered the risk of making new stones in my prior clients. This recipe was only a start. She of course needs to discuss any changes with her urologist since only he could continue to monitor her progress.

(2) Example a vegetarian couple from South India.  Because of the culture,  vegetables nor spices were a problem.  Yet the client had Diabetes & Chronic Kidney Disease.  So our focus was on how they prepared their vegetables. Using what was in season, learning how to  water sauté, thereby adding more healthier herbs/spices into our dish. Ahhh, I made that same dish later that night and OMG!

[3} Example client from Louisiana who loved her Cajun Cuisine. Her meal was Crawfish Etouffee with beans and rice.  So we discuss certain mushrooms that mimic the taste of seafood. How we were going to prepare our beans/rice to save time in the kitchen.  And to sum it up I selected 2 videos that we reviewed together on how to prepare this great dish.
